How to turn pork into fake beef

Now I know why the beef in China always has that spongy texture.  Apparently adding Borax to food in China is quite common. Its used to add texture to noodles especially and I think it’s also in the chicken nuggets. And I thought borax it was only good for detergents !  click on newspaper article to enlarge:
